Chef Marcus Samuelsson has partnered with the new Four Seasons Hotel Montreal to launch a new F&B concept named Marcus. The eponymous restaurant and bar will mark the famed chef’s arrival in Canada, and will reflect his Ethiopian and Swiss roots as well as the musical and artful influence of New York.
“Montreal’s sophisticated and worldly sensibility is one that I’ve long been attracted to,” says Samuelsson. “Its global dynamic and European flair closely relate to my own journey. I can’t wait to bring my flavors and vision to this incredible culinary culture.”
Samuelsson will reinterpret the traditional brasserie concept with an emphasis on sustainable seafood—complete with a raw bar and locally sourced produce and grains. Locally based designer team Atelier Zébulon Perron will oversee the crafting of the series of spaces, which will flow freely across the third floor of the hotel. The eatery will open with a lounge area with the chic, indoor-outdoor dining environment just beyond.
