Chef Gray Kunz has partnered with Adelphi Hospitality Group, the principals behind the renovation of the city’s historic Adelphi Hotel. The group, along with development partner Richbell Capital, also purchased the restaurant adjacent to hotel, which will become Salt & Char, a modern steakhouse. The restaurant will open early this year; the hotel is slated to open in 2017.
“It thrills me to be opening Salt & Char in Saratoga Springs. As a chef, I am constantly inspired by the Hudson Valley region—a place many consider the market garden of New York,” says Kunz.
With Salt & Char, Kunz returns to New York after a sojourn in Hong Kong, where he operates Café Gray Deluxe at luxury hotel the Upper House. Previously, Kunz lived in New York, where he earned four stars from the New York Times as the head chef of Lespinasse at the St. Regis, and owner of restaurants Café Gray and Grayz.
Kunz is also working on concepts for two other restaurants at the Adelphi Hotel.
