
Since 1985, Jeffrey Beers has been one of the country's foremost designers for hospitality. Among his most acclaimed works are the restaurants China Grill, Japonais, DB Bistro, and Ono, as well as such high-profile hotels as The Tokyo Hilton and Miami's Fontainebleau. In this wide-ranging interview with HD editor-in-chief Michael Adams, Beers discusses his early years as a designer, the influence of his mentor I.M. Pei, his love for hospitality, the many changes in the industry he¹s witnessed over the past three decades, and the challenge and satisfactions of working with such legendary figures as Daniel Boulud, Sol Kerzner, and Jeffrey Chodorow.
